Err.... well. I usually do:
apt-get update
apt-get upgrade
if I find too many packages "hold back" I run
apt-get dist-upgrade
I've never progressed to the more gui-like thingies. It seems not to be
a problem to switch to a different mirror. You can simply add (or better
replace the old entry) with a new mirror. Make sue to run the "update"
first. update means "fetch list of all current packages", upgrade does
the actual upgrading.
But I'm sure other can explain this stuff in all the subtle details.
